ADEEF Celebrates the Success of the 2024 Diabetes and Endocrinology Symposium
We are thrilled to announce the successful conclusion of the 2024 ADEEF Diabetes and Endocrinology Symposium, held on September 6-7 in both Little Rock and Fayetteville. This year’s event was a tremendous success, thanks to the collaboration and support of our sponsors.
The Little Rock session, co-sponsored by CHI St. Vincent, and the Fayetteville session, co-sponsored by Washington Regional Medical Center (WRMC), attracted a diverse group of healthcare professionals, educators, and advocates. We were honored to feature two distinguished keynote speakers: Dr. McGill from Washington University and Dr. Sun from Harvard University, both of whom delivered captivating and insightful presentations.
The symposium received outstanding feedback from attendees, who appreciated the high-quality sessions and the opportunity to engage with leading experts in the field.

ADEEF Announced the Winner for the Most Liked Healthy Recipe Contest
We are excited to announce the winner of the ADEEF Most Liked Healthy Recipe Contest! Congratulations to Donita Clark, RD, LD, CDCES, for her winning recipe: Whole Grain Waffles. Donita’s delicious and nutritious waffles received the most votes from our community, standing out for its health-conscious ingredients and great taste.
As the contest winner, Donita has been awarded a $250 Amazon gift card. We’re thrilled to share this recipe with everyone, promoting healthier eating habits in line with ADEEF’s mission.

Whole Grain Waffles
Whole Grain Waffles makes 6 (or for smaller waffles, makes 12)
Ingredients:
2 eggs, beaten
1 ¾ cup unsweetened almond milk
¼ c canola oil
¼ cup unsweetened applesauce
1 tsp vanilla extract
1 c whole wheat pastry flour
½ c flax seed meal
¼ c wheat germ
¼ c all-purpose flour
4 tsp baking powder
2 T. Splenda
¼ tsp salt
Whisk together wet ingredients in a large bowl.
Add dry ingredients
Mix again until batter is smooth.
Preheat a waffle iron and coat with nonstick spray.
Pour batter into waffle iron in batches
Cook until crisp and golden brown.
These are soft and delicious and provide much more fiber than
traditional waffles. I serve with peanut butter instead of syrup.
